Chocolate Protein Cookie Bites
Ingredients
1/2 cup oat flour
2 scoop vanilla/ choc protein powder
2 tsp melted coconut oil
2 tbsp maple syrup
3 tbsp peanut butter
1 tsp vanilla extract
Pinch sea salt
1 tsp cinnamon
1 tbsp water
Coating
50g melted dark chocolate (I use lindt dark choc with sea salt)
1 tsp melted coconut oil
Method
1. Add all the dry ingredients into a bowl and mix together
2. Then add the wet ingredients (I melted the peanut butter and coconut oil together before adding to the dry mix) and combine until it starts to come together and then use your hands to work into a ball. Add more water if needed.
3. Roll into little bite sized pieces (approx 1 tbsp dough) and set aside
4. Melt chocolate and coconut oil on a plate in the microwave (approx 1min 40 secs)
5. Place a cookie bite into the melted chocolate and coat. Set on a plate and repeat with remaining cookie bites. If you don’t want to get messy you could just cover half the bite in chocolate.
6. Place cookie bites into the fridge until set (about 1 hour)
