Chocolate & Oat Crumble Bars
Crumble
2 cups rolled (jumbo) oats
1 cup oat flour/ almond flour
¾ teaspoon ground cinnamon
Generous pinch of sea salt
3/4 teaspoon baking soda
1/4 cup maple syrup
6 tbsp melted coconut oil
1 tsp vanilla extract
Chocolate centre
1 cup dark chocolate (I used Lindt dark chocolate with sea salt)
1 tbsp nutella
Method
Preheat the oven to 180C. Line a small baking tray (mine is 27x20cm) with parchment paper and set aside.
In a large bowl, whisk together the maple syrup, coconut oil and vanilla extract
In a separate bowl, combine the oat flour, oats, baking soda, cinnamon and salt. Add the dry ingredients to the wet ingredients and stir to combine
Place a little more than half of the oat mixture into the bottom of the prepared tin. Press the mixture into the tin, I used the base of the measuring cup for this.
Melt the chocolate in the microwave (approx. 3 minutes stirring occasionally). Once melted, stir in the nutella. Carefully spread over the oat base.
Crumble the remaining oat mixture evenly over the top of the chocolate and gently press down. Bake in the centre of the oven for 15 minutes, until the top is just golden.
Leave to cool before removing from the tray and slicing into bars.
