Chocolate Chip Cookies

Ingredients | Serves 10

1 cup packed muscovado sugar

½ cup white granulated sugar

1 cup unsalted butter, melted

2 cups all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

1 egg

1 egg yolk

1 tablespoon vanilla extract

2 cups chocolate of choice 

Method

  1. Preheat oven to 180C and line two baking sheets 

  2. Sift flour, baking soda, and salt together; whisk to combine and set aside. 

  3. Beat brown and white sugar, melted butter with an electric mixer or by hand in a large bowl until smooth. Beat in egg, egg yolk, and vanilla until light and creamy; add flour mixture and stir until dough is just combined. 

  4. Stir in chocolate 

  5. Drop large spoonfuls of dough a few inches apart onto the prepared baking sheets.

  6. Bake in the preheated oven until edges are just turning golden, about 10-12 minutes. Cool on the cookie sheets briefly before transferring them to a wire rack to cool completely.
