Spicy Beef Noodle Soup

Ingredients | Serves 2

650 ml beef stock 

1 tbsp honey 

2 tbsp soy sauce

2 tbsp rice vinegar 

2 tsp worcestershire sauce 

2 tsp marmite

2 tsp sesame oil

To serve: veggies, noodles and chilli oil 

500g beef mince (makes enough for 4 servings, I make extra and use surplus for egg fried rice or with noodles)

1 tsp five spice 

2 tsp smoked paprika

1-2 tsp chilli flakes

Crack of Black pepper 

1 tbsp muscovado sugar 

1 tsp each minced garlic and ginger 

Method

  1. For the mince: put a frying pan on a high heat and add 1 tbsp neutral oil. When hot and glistening and the mince and break it up a little. Then leave this for a few minutes (don’t add salt!). When it's starting to get a nice dark brown colour underneath add all the other ingredients before you stir everything together and break up the mince. Once the mince is all browned remove from the heat and add a little salt or soy sauce to season. 

  2. For the broth: in a deep saucepan add the beef stock and all remaining ingredients for the broth and bring to a steady simmer. Simmer gently for a minute or so and give taste! 

  3. Serve in bowls with noodles (I used whole wheat), veggies (I used Swiss chard) and lots of chilli oil (I used homemade). Enjoy!
