Horchata Popsicles
Ingredients
1 1/2 cups water (may need adjusting)
1 litre whole milk
1 tsp ground cinnamon
1 cup white rice
2 cinnamon sticks (use mexican brand ones!)
2-3 tbsp condensed milk (depending on how sweet you like it)
Method
Wash the rice!
Bring water, milk, and ground cinnamon to a simmer
When simmering, stir in the rice and cinnamon sticks and simmer for 15 minutes.
Remove from the heat
Strain it, making sure you squeeze out all the liquid from the rice. Whisk in the condensed milk and taste to see if it’s sweet enough. Then pour into a pitcher and let it cool down before pouring into popsicle moulds and freeze.
