Mum’s Curry Chicken

Curry

Ingredients

1 chicken (3 lbs)

1 tbsp minced garlic

2 tbsp green seasoning (garlic, cilantro, green onion, thyme, parsley)

1 tsp salt or to taste

1/2 tsp hot pepper (can omit)

2 tbsp vegetable oil 

3-4 tbsp curry powder

1 tsp cumin, turmeric, black pepper 

Sprig of thyme 

Chilli 

1/2 cup chopped tomatoes

2 onion, sliced 

1/2 cup hot water

Method

1. Slice chicken in pieces and season with garlic, green seasoning, salt, and hot pepper

2. Let this marinate for 30 minutes or more

3. Heat oil in pot on med/high heat

4. Combine curry powder with 1/2 cup water until smooth paste, add to hot oil along with the thyme and chilli and cook 2-3 minutes. You want most of the water to evaporate and the colour of the spices to darken. 

5. Add in the chicken and stir to coat in curry, stir well and then cook for about 10 minutes. The chicken should get a nice colour on bottom and most of the juices should have evaporated. 

6. Turn the chicken and then add tomatoes and onion. Give everything a stir before adding 1/2 cup hot water

7. Reduce the heat to medium low, cover and cook until meat is tender, add more water if more sauce is required. 

Roti (flatbread)

Ingredients

4 cups flour 2

3 tsp baking powder 1.4

2 tsp brown sugar 1 

1 tsp salt

1 3/4 cups warm water or slightly more

Method

1. mix flour, baking powder, salt and and sugar

2. add enough water to make a smooth dough, knead well

3. cover with damp towel and leave for 1/2 hour to rest

4. divide dough into eight and roll them into balls

5. roll ball of dough out on floured surface to 1/2" thick and 8" round

6.  cook on moderately hot baking stone or griddle until it rises and turns brown, turn to other side and cook

7. toast edges over fire to make sure they are cooked, serve hot
