Fadhila’s Pineapple Chutney
Ingredients
3 tbsp coconut oil
1 pineapple, sliced
1 Small onion/shallot sliced
1 tbsp dried fish
2 tbsp raisins
6-7 curry leaves
3 tbsp jaggary
180g sugar (it depends on the taste)
Pinch of salt
Pinch of chilli powder
3-4 ground cardamom’s
1/2 tsp cinnamon bark
Method
Keep the pan on the stove and heat it
Add some oil to heat
Add onion, curry leaves and fry for one to two minutes.
Add the dried fish and mix it for a while
Now add the diced pineapples, and then salt and chilli powder, mix it and simmer for 15-20 minutes.
Whilst this is simmering you can add jaggary and then few minutes later add sugar.
Mix it and keep on medium heat until it turns sticky and a little juicy.
Once you have done, serve with fresh coconuts and toast bread or you can eat with biryani.
